{January 14, 2011}   Week #3 Menu. 23 down, 342 to go!

January 15-21 2011
Week #3 23/365 as of Jan 13

I didn’t make as much as I intended last week. We had two leftovers nights instead of one. Partially because the Hoisin Chicken was a HUGE hit. As were the Blueberry waffles. The potato salad is going back on the menu for hubby’s lunches for this week.

I also added four new books to the cookbook collection. Yes, I have a problem. 🙂

This week is a low budget; eat from the pantry and freezer week. I don’t necessarily cook these on the day they are written for.

Sat 15: Oven Baked Corn Dogs and Parmesan Potato Bites

Sun 16: Linguini with Caramelized Onion, Bacon and Olives

Mon 17: Swiss Turkey Burgers, French fries, broccoli

Tues 18: (recipe not posted yet) Easy Skillet Lasagna (365 One Dish Meals), crescent rolls

Wed 19: CORN – leftovers night

Thurs 20: (recipe not posted yet) Sausage Onion and Pepper Pizza (365 Low Fat Meals), salad

Fri 21: Dentist appointment Polynesian Spare Ribs, rice, SE Asian Pineapple Sesame Dressing on salad (Soup for me, out of the freezer – depends how I feel)

Breakfast: Chocolate Chip Waffles

Lunches: Sherry Braised Roasted Peppers, Potato Salad with Parsley and Chives and Lentil Salad with Spinach, Pecans and Cheddar (double the lentils and freeze)

I also want to can some jams (fruit from freezer) this weekend if I can find the time – Mango Raspberry, Elderberry Peach and Strawberry Margarita.

As of the 9th – 19 down, 346 to go!

Here’s this week’s menu – already being changed because the cucumbers in the fridge needed tossing and I have a dentist appointment I forgot about… I made the bread from last week’s menu, so I won’t make the mango honey bread this week.


January 8-14 2011

Sat 8: Basic Risotto, Flank Steak, Green Beans
Brussels Sprouts with Bacon and Balsamic, Crescent Rolls

Sun 9: Fusilli with Spinach and Sun Dried Tomato Pesto

Mon 10: Turkey Marsala with Sweet Potato Wedges, Savory Rice Pilaf, Green Beans

Tue 11: Hoisin Glazed Chicken Thighs (make double and freeze), Rice and Green veggie and/or sautéed lotus

Wed 12: Angel Hair with Smoked Salmon, peas, crescent rolls

Thurs 13: Lime Cilantro Pork Tacos, Tropical Fruit Salad and Pickled Red Onions

Fri 14: CORN – leftovers night

Breakfasts: Blueberry Waffles, Pumpkin Yogurt Pudding, Mango Honey Bread (made with my mango butter from last summer)

Lunches: Spinach Pear Salad with Mustard Vinaigrette, Gingered Cucumbers



{January 3, 2011}   Project 365

My friend Mo made a comment about all of my cookbooks the other day and inspired me to actually start USING them… so in 2011, I will be making 365 never before tried by me recipes, using the books I currently own.

The books:

Food.com will help. I use that site as my own personal filing system for recipes. I like the search/organize features and it will help me plan my menus.

As of today, January 3rd, I have 5 recipes completed. Only 360 to go!

Week #1:

Sat 1: Pineapple Marinated Pork and Orzo Broccoli Pilaf, pineapple (grilled) and watermelon

Sun 2: Hungarian Goulash (crock pot) with Egg Noodles

Mon 3: Italian Turkey Burgers, home fries (or leftover orzo pilaf?) and Red Pepper Mayonnaise

Tues 4: Shrimp in White Wine Sauce, Spaghetti with Parsley Butter Sauce (does not count for project since it is a recipe I have made before)

Wed 5: Chicken China Moon, Broccoli, Rice, Stir Fried Lotus w/ Sesame and Green Onion (does not count since I have made it before. (one extra chicken breast cooked for later in the week recipe)

Thurs 6: Leftovers night CORN (clean out refrigerator night)

Fri 7: Barbecued Chicken Pizza, salad with corn?

Bread: Applesauce Bran Bread (this probably won’t get made this week)

Lunches: Fennel Egg Salad and Lentil Pear and Goat Cheese Salad

Breakfast/Dessert: Peanut Butter Chocolate Chip Loaves and Cranberry Cheesecake Muffins
