No tiime for uber pretty last night.

On the left: kale sauteed with seaweed, teriyaki baked tofu, cauliflower (with chives and lemon) and cherry tomatoes.

On the right: sweet mini bell peppers stuffed with hummus (from my hiker food stash), yellow cherry tomatoes, carrots and Persian cucumbers.

The boxes are lined with red cabbage (helps stuff stay in place).

Clockwise from the top: radish pickles and cauliflower, kiwi and strawberries (breakfast/snack), rice and diced turkey (roasted thighs with olive oil, thyme and sage – hubby was raving), sauteed kale with seaweed and a couple of yellow cherry tomatoes.

Forgot to blog this one yesterday!

On the left: Orzo tossed with leftover chimichurri salmon, zucchini and peas, olive oil, lemon juice and freshly ground black pepper. Topped with cherry tomatoes.

On the right: balsamic sauteed bell peppers, quails eggs, sweet potatoes and pineapple.

It’s been awhile since I’ve cooked up some tofu. I found this awesome orange chicken style tofu online and knew I had to try it.

Today’s bento is dinner leftovers. I’m still pretty excited about it though.

On the left: seaweed salad topped with a cherry tomato, fresh pineapple, stir fried mushrooms.

On the right: rice with sweet potato flowers, orange chicken style tofu (YUM!)
