{June 2, 2009}   How Dinner Turns into Lunch – Bento #37

Last night’s dinner was an easy pantry meal of tuna cakes, sauteed zucchini and steamed jasmine rice. Ranch dressing for dipping the tuna cakes and zucchini in. Nice easy summer dinner. For dessert we had vanilla yogurt and fresh sttrawberries. Hubby and kidling had cinnamon teddy grahams on theirs. I made extra dinner on purpose so that I would have lunch today and could make pork fried rice for dinner tonight.

Here is the resulting bento

Sauteed zucchini, ranch dressing in the container, grape tomatoes, edamame and tuna cakes on a bed of jasmine rice. Yum! I also have a fruit bowl of watermelon and strawberries for snacking on.
